Pa Jeon Recipe – Korean Scallion Pancake (Crispy & Savory)

Crispy on the outside and soft inside, Pa Jeon is a beloved Korean savory pancake made with scallions. It’s often enjoyed on rainy days with a glass of makgeolli (Korean rice wine), carrying a nostalgic and cozy cultural meaning in Korean homes.

Ingredients

  • Flour – 밀가루
  • Rice flour – 쌀가루
  • Water – 물
  • Egg – 달걀
  • Scallions (green onions) – 파
  • Salt – 소금
  • Vegetable oil – 식용유
  • Soy sauce – 간장
  • Vinegar – 식초
  • Sesame seeds – 참깨
  • Chili (optional) – 고추 (선택)


Steps

  1. Mix flour, rice flour, water, egg, and salt in a bowl to make a smooth batter.

  2. Heat a pan with vegetable oil over medium heat.

  3. Place scallions evenly on the pan, then pour the batter to cover them.

  4. Pan-fry until golden brown on one side, then carefully flip.

  5. Cook until both sides are crispy and fragrant.

  6. Mix soy sauce, vinegar, sesame seeds, and chili for dipping sauce.

  7. Serve hot with the dipping sauce.


Tips

  • Replace wheat flour with gluten-free flour for a gluten-free option.

  • For a vegan version, omit the egg and add a bit of cornstarch for crispiness.

  • Add seafood like squid or shrimp for Haemul Pajeon variation.

  • Best enjoyed with Makgeolli on a rainy day for the authentic Korean experience.
