Kimchi Jjigae – Korean Kimchi Stew

Kimchi Jjigae is one of Korea’s most beloved comfort foods, featuring aged kimchi simmered with pork, tofu, and vegetables in a rich, spicy broth. This hearty stew is often shared at the table, symbolizing warmth and togetherness in Korean dining culture.

Ingredients

  • Aged kimchi – 신김치
  • Pork belly or pork shoulder – 돼지고기 삼겹살 또는 앞다리살
  • Tofu – 두부
  • Onion – 양파
  • Green onion – 대파
  • Garlic – 마늘
  • Gochugaru (Korean chili flakes) – 고춧가루
  • Gochujang (Korean red chili paste) – 고추장
  • Soy sauce – 간장
  • Sesame oil – 참기름
  • Anchovy or beef broth – 멸치육수 또는 사골육수


Steps

  1. Cut pork into bite-sized pieces and sauté with sesame oil, garlic, and onion until lightly browned.
  2. Add aged kimchi and stir-fry with pork for deeper flavor.
  3. Pour broth into the pot, then add gochugaru, gochujang, and soy sauce. Bring to a boil.
  4. Simmer for 15–20 minutes until pork is tender and flavors are infused.
  5. Add tofu and green onion, simmer briefly, then serve hot.


Tips

For a vegetarian version, replace pork with mushrooms and use vegetable broth.

For extra depth, add a small amount of canned tuna or fermented soybean paste (doenjang).

Enjoy with steamed rice and a side of kimchi for the ultimate Korean home meal.
